What kind of Cognex camera? What kind of gripper (Cognex doesn't make grippers). What model of iiWA, with what interface options available?

Cognex - ISM-1402-11
your camera part number tells it is 12x faster than ISM1020, has resolution 1280x1024, patmax and extra memory.
according to info on page 2 it supports standard ethernet and RS232 comms:

there is plenty of online resources (including Cognex) showing how to communicate
grippers can have different types of control (pneumatic, electric, fieldbus, ...). your gripper info is not helping narrow it down so i am tempted to say 'just use copper wires'.

Still not enough detail. What communications fieldbus, if any, are you using? Do NOT say "ethernet" -- Ethernet is a cable, not a communications protocol.
No details on gripper at all? What powers it? What communications bus is it configured for? Does it have an on-board controller? Motors? Sensors? Pneumatic actuators?
The Cognex ISM cameras are PoE, so you'll need a PoE power injector inline. The iiWA IO-Electrical option provides cabling for 2 ethernet cables through the arm, one 100Mb (4-wire) and one Gigabit (8-wire). You'll probably need to use the Gigabit cable for the Cognex.
