We have an older (2001 model) S-430iW robot with R-J3 controller that we bought a few years back from a local shop that went out of business. It was used very little in a welding application. We now have an application in-house for it. But we don't have any documentation (manuals, wiring schematics, etc.). It does power up. Where can we acquire the documentation we need?

Fanuc would be the best option, but be prepared to pay a hefty fee just to re-re-license your robot. Google and EBAY will be your best options for this.

For software I could not find a RJ3, but if you can buy a handlingtool manual for RJ2 or RJ3iB it will help you on your way a lot.

which version of software do you have? (between v5 to v6)
I may have it..

There are 2 R-J3 controller types - single run-chain (R-J3) and dual run-chain (usually called R-J3 RIA). The R-J3 RIA version will have a Mode switch (Auto-T1-T2) on the front of the controller and the R-J3 does not. For controller maintenance & controller parts manuals, make sure you get the right ones for your controller type.
