I am generating a .src and .dat file on a PC and transferring it over a file share to a KRC1 controller - however, on the TP the program appears with a text file icon and is not selectable.

Why is this, and how do I get it to compile and become a runnable program?

Also, once that's solved, if I update the files over the file share, what's required for the changes to take effect?

not sure about KRC1 but in general - if you want controller to recognize program modules, you need to bring them in using kuka HMI and not windows explorer...

Once they are recognized, can they be updated remotely?

for files to be recognized as program modules, they need to be compiled - otherwise they will appear as text files.
if they have right extensions and structure, they will get compiled when you copy them from shared folder or disc into ramdrive (KRC:\)

I've gotten into a decent workflow of copying to a folder on C:\ and then using the HMI to copy/paste the files, it's a little tedious for making touchups over and over but it works.
