From me experience one thing is to be able to enable and disable DCS zones where you have people or other equipment entering the robots working area
I hope you are not learning this on a real system.
The manual is pretty clear on the terms. What ones are you having trouble with?
Also, in the future, pick more descriptive names for the subject of your thread. A thread named "Fanuc", in the Fanuc subforum, is not very descriptive.
What is a CIP safety Input and Output ?
CSIs and CSOs are inputs and outputs send over a safe network protocol, e.g. PROFIsafe or CIP Safety.
See chapter 9 of the DCS manual for detailed information about the different input and output types.

CIP = Common Industrial Protocol
CIP safety inputs and outputs are safety rated inputs and outputs to a safety device, over whatever safety level comms protocol option you have installed on the robot (In my area, this is either Ethernet/IP safe, or Profisafe). Typically you then communicate over that protocol to a safety PLC responsible for the overall safety of the cell.
You can configure these however you want, but typically at the bare minimum you want a fence status input, and an estop status input. Those are your CSIs. Usually, the safety PLC will want to know the status of your estop, and you can map that out via a CSO. All mapping is done in the SAFE IO section of the DCS menu.
