I am new to robotics and I want to build my own microcontroller where it can control a camera, some dc motors, and some servo motors and I want to know where to even begin with that type of project. Sorry if there is a lack of information, still working on terminology.

Get some starter kit for your microcontroller of choice. Check Amazon for example.
I would recommend something like Freenove kits since they include very detailed and easy to follow tutorials for their kits. Pretty massive downloads but carefully crafted.
