I know one of the wires is going to one of the RO and the ground will go to 0v, but I'm not sure what I should solder the 3rd wire (-) to.

2 - -
3 - ground.

So with the n/c am I going to the other 0v or should I just ground it to the cabinet itself
It would normally go to Earth ground which the arm doesn't really have. I would worry about connecting to 0V as it may connect the external sections of the device to 0V which isn't always a good thing.
Depending on the volume of air needed and the speed in which it is needed. You can have the valve at the base of the robot and use Air 1 to pass it up to the EOT. Air2 is connected to the internal valves which can't switch vacuum.
